Personality Pops

I'm actually out in California working right now (I know, tough life I have..) but wanted to post these pops I did for my friend Rob's birthday back in March. He is an "old man" at 30 years old now, haha! and I knew I couldn't make cupcake cake pops for a dude's birthday so I tried to make these as funny as I could. They were definitely a hit and everyone got a kick out of the "witty" personality traits. :) Sorry in advance if these pops offend anyone.

Tasty Gazpacho

All I can really say is that I heart gazpacho in the summer time...it's so healthy and refreshing! It makes you feel better about having those four hot dogs the day before..oh wait, was that just me?

Roughly chop up 8 plum tomatoes, and place in food processor. (be sure not to over process!) Add to large pot. Roughly chop up 1 1/2 English cucumbers, and place in food processor. Do the same with 3 red bell peppers, and a red onion. Mix all the vegetables together. Add in chopped fresh garlic, 1/2 cup white wine vinegar, 1/2 cup of GOOD extra virgin olive oil, and 46 ounces of tomato juice. Add salt and pepper to taste. Refrigerate for at least 3 hours before serving, it allows all the flavors to come together and get happy. It tastes great the next day as it continues to combine all those flavors together. Serve cold and enjoy!

Simple Open Faced Tea Sandwhiches

My dear friend Dana just got engaged and we finally had a girl's night to toast to her happiness, here and ever after. Everyone made some great food to bring along, and I made these little tea sandwhiches that are always a SIMPLE hit.

I used a 3 inch circle cookie cutter, and cut two circles out of each piece of pumpernickle bread. I smothered the bread with some cream cheese, and topped it off with cucumbers. Simply drizzle some GOOD EXTRA VIRGIN OLIVE OIL over the top, with some cracked black pepper and some sea salt.
I also made some with tomatoes and basil, the same with the drizzle of GOOD EXTRA VIRGIN OLIVE OIL and sea salt and cracked black pepper.
YUM!
